Garlic Shrimp and BowTie Stir Fry


This evening, I played Chef. Yes, that's right, Chef. I made some awesome Garlic Pepper Shrimp and Bow tie Stir Fry ( I ate this at our Sharp Coronado Hospital Cafeteria when working on a project, and had to bring home the recipe). The stir fry has peas, ham, artichoke hearts, mushrooms and chopped onions. All you need to do is add a little veggie stock and white wine, satay for a bit and when completed, pour on top of your favorite bow tie pasta! Don't forget the shredded Parmesan on top! Delish!

A week in action

Wow, I think I did well to get back on track, besides Monday and Tuesday recovering from the 10k. Wednesday night I went to cardio kickboxing and on thursday I jogged 2miles, fast walked 2mikes, then went to Zumba class. Ohhhhhhhh yeahhhh! Friday night was more if a rest and because it was such a beautiful day I couldn't resist not going to happy hour. This morning I woke up and went to the gym, 3 miles in just half an hour. Now....off to celebrate a rainy day :) gooooood morning!

10k

Wow! It's been a while. It's a new year and I've already completed a 10k, the Cardiff Kook run. I completed the run in one hour and fifteen minutes. I'm getting back on track with eating right and getting more active. Boy...does it feel good!!!

after 1 week, hope to keep the lbs off!

Almost one whole week had gone by without exercising, and boy did it feel great to get off the treadmill (and then the cross trainer) after an hour tonight. It's not that I didn't want to work out, I was just busy or well....lazy. Its a horrible word, lazy. I guess if you work overtime most of the week, when you get home, the last thing you want to do is work out....unless your Jillian Michaels. That chicks just nuts! But hey, if working out was my job, I would have my perfect body. I must say, if I can't work out, keeping consistent with my health eating habits makes me feel a heck of a lot better. I feel like oatmeal and scrambled eggs (not combined of course) has saved my life, in addition to my multivitamins(can't forget those giant suckers, they taste so horrible the second you put them in your mouth, but if that's what the Dr. orders, you do it!). But after a weekend of bending the diet rules, I'm hoping to have maintained weight. Official weigh-in's are on Fridays. You know why?? Because the weekends are hard to diet, so you have the rest of the week to make up and recover ;)
As of last week I had maintained my weight loss to -31 lbs (at 134lbs). Enough of the little violin. Have a great weekend and have fun! stay out of trouble and Go Packers!!!

Lazy Sunday

It's been a lazy day. I slept in (which never happens) until 10a this morning. Took a shower and headed over to Ralphs to buy stuff to make Spicy Guac Turkey Burgers. After eating, Gary and I started watching the Laker v. Celtics game and was able to complete my taxes at the same time. Its been almost a year since my annual physical in which I was informed by my physician that I needed to shed about 50lbs. So far i have lost 30. I've been working out about 45min to an hour a day and have been eating smaller portions. My water intake has also increased in which I feel that I have to use the restroom every 10min. I guess all the toxins are flushing out. Yesterday, Gary and I went to the Farmers Insurance Open at Torrey Pines. It was a beautiful day and saw a bunch of amazing players walk around the green. Ash came up to visit after, we had a few drinks and hung out. Like I promised, I will start posting fitness tips and meal advice that I have taken to help me shed the pounds.
